Tropically roasted pork ribs

This recipe is one of my creation; i used Afro Spoon Rub for poultry & pork. The combination of bush onion (rondelle), lemongrass and ginger gives an exotic and sweet taste to these ribs; that's why it is labelled "Tropically roasted" . Also, It is economic and easy to make.

 

Ingredients

  • 3 tablespoons sun flower seeds oil

  • 4 pounds baby-back ribs, split into one

  • 1 branch of lemongrass cut in 8

  • 1 very large onions, sliced very thin, about 2 cups

  • 1 teaspoon of sea salt

  • 1 bag of Afro Spoon Rub for poultry & pork
  • ½ green pepper, sliced as onions

 

Direction

1- Pour the sun flower seeds oil into a 12-inch saute pan, turn the heat to high, and when the oil is hot, slip in the meat. Turn the ribs two or three times to brown them well.

2- Add the sliced onions, salt, Afro spoon Rub for poultry & pork, cover the pan and turn the heat down to medium. Cook for 40 to 55 mn, turning the ribs occasionally, until the meaty part of the ribs feels very tender and the onions have cooked down to a creamy consistency.

3- Add the lemongrass and green pepper and cook for another 15 mn

 

Presentation

Serve with red cabbage salad and guacamole + cherry colored potatoes basilic salad
